Almond Joy Fudge
This fudge recipe is irresistible. Not only is it super healthy, but it tastes like you’re eating a rich candy bar. This ingredient only uses 3 ingredients as its base. The rest just put it over the top!
Coconut oil is a good fat and is unique in that it is doesn’t raise blood glucose levels and it is processed immediately by the body and turned into energy. It isn’t stored in the body where it can be turned into fat. For this reason it boosts the metabolic rate. The MCFA’s don’t even require pancreatic digestive enzymes to break them down. According to Bruce Fife, C.N., N.D. in his book The Coconut Oil Miracle, the metabolic rate stays elevated for at least 24 hours after eating, meaning more energy and fat burning throughout your day.
- 2 cups agave or other liquid sweetener
- 2 cups coconut oil
If your coconut oil is solid, place its container in a sink of hot tap water to melt it first. Then put both ingredients in a high power blender and add:
1 cup raw powdered chocolate (or unsweetened cocoa)
Blend well, then pour mixture into a bowl and stir in:
- 2 cups shredded coconut, raw & unsweetened
- 2 cups chopped nuts (recommend almonds)
- 3 drops peppermint or orange essential oil
Pour the mixture into a 9×13 pan, chill 2 hours, and cut into squares to serve
